VINIFICATION
Fermentation, at a controlled temperature, lasts about two weeks with several delestages to allow for optimal extraction of the polyphenols and colouring molecules from the grapes. Subsequently, about one-third of the product is aged in barrels for about four months, then completes its ageing in steel tanks.

MATURATION AND AGEING
Approximately 1/3 of the product is aged in barrels for about 4 months, then completes its ageing in steel tanks.

PAIRINGS
Exceptional with cold cuts and cheeses, pasta dishes with meat sauce, pizzas and roasted red meats. Also excellent as a meditation wine.

Description

We are in Sinis, on the west coast of Sardinia (Italy), one of the most generous regions in Sardinia in terms of the quality of its wine production. The roots of this exceptionality can be found in the particular geographical location, the favourable climate and the abundant biodiversity.

The privileged geographical position of the vineyards, the mainly loamy-clayey soil and the mild climate offer a variety of colours. The wind, which often changes direction, helps to cleanse the air, mixing aromas and scents in this rich and uncontaminated land where the vineyards are surrounded by olive trees, fruit and vegetables from organic farming.

The climate is still one of the determining factors in the results that can be appreciated in the glass. Each vintage is different and unique, with varying degrees of longevity, and will pass on its distinctive characteristics in an original way over time. The presence of the Mistral wind creates different micro climatic conditions, allowing the grapes to develop particularly fine and intense aromas.
