San Gennaro Cookies Recipe

  • 500 g all-purpose flour
  • 200 g sugar
  • 150 g lard (or butter if preferred)
  • 2 eggs
  • 1 packet of baking powder
  • A pinch of salt
  • Grated zest of 1 lemon or orange
  • 1 teaspoon ground cinnamon (optional)
  • Amarena cherries (about 10-15, or to taste)
  • Milk (as needed to bind the dough)
  • Powdered sugar for decoration

Instructions:

  1. Prepare the dough:
    • In a large bowl, mix together the flour, sugar, baking powder, salt, and cinnamon (if using).
    • Add the lard (or butter) and mix with your hands until the mixture resembles coarse crumbs.
    • Add the eggs and grated lemon or orange zest, and knead the dough until smooth. If the dough is too dry, add a bit of milk, one tablespoon at a time.
  2. Shape the biscuits:
    • Take small portions of dough and roll them into balls. Flatten them slightly and place them on a baking sheet lined with parchment paper.
    • Press an amarena cherry into the center of each biscuit, gently pressing it into the dough.
  3. Bake:
    • Preheat your oven to 180°C (350°F).
    • Bake the biscuits for about 15-20 minutes, or until they are golden brown on the edges.
    • Let the biscuits cool on a wire rack.
  4. Decorate:
    • Once cooled, dust the biscuits with powdered sugar.
