This organic oil comes from a blend of Ogliarola and Dolce di Rossano.

This organic is a ”mosto”. This means that it is produced using a technique reserved for oils of the highest quality.
The ‘mosto’ is in fact the result of the first cold pressing of the olives. The result is a pasty product that is then left to rest and decanted periodically so that the lees separate and settle at the bottom of the vat.
The ‘mostos’, in general, are not filtered and do not undergo any further process and once bottled will continue to release a slight deposit.
This brings out all the organoleptic qualities of the olives. They are particularly suitable for raw consumption, a mode in which they express themselves best.
